Anyone know of any software that will transfer music to both an ipod shuffle and a sony walkman?

Winamp might. It can transfer to an iPod but not sure about the Walkman.

Does the walkman require Sonic Stage?

Winamp maybe? I know there is a software that can be used instead of itunes I just have to have a look for it! Im sure it would do sony as well
