I'd like to set up port forwarding to try to get my NAT setting to Open but I never get by the step trying to find a static IP address.

Just make one up:

They all have to have
192.168.1.(put any number between 2 and 254 here)

Are you sure you can just make one up?

Yeah I used 192.168.1.17 for TVersity and 192.168.1.14 for the 360. Both off the top of my head.

Yes you can use any number, as long as it isn't used by anything else on your network.
